If you buy a red dragon fruit, you will notice that it looks very similar to the white dragon fruit. When you cut it open, the inside has a magenta or crimson colour that is similar to purple dragon fruit. It tastes somewhat sweet, like a cross between a pear and watermelon, and has the consistency of a kiwi, but it has a more complex flavour profile than the white variety. Leave your dragon fruit on the counter if you plan to consume it in the next 2-3 days. Dragon fruit can be stored for a few days, but be careful not to cut or peel it before then. If you want to keep them longer, you should put the dragon fruit in the refrigerator to slow down the ripening process.
