Pisang Rastali also known as pisang kepok, are small bananas with an aroma of tropical, floral and fruity overtones. When ripe, these bananas have a slightly sweet flavour with notes of pineapple, strawberry and apple. Ang Bak Jio develop from pale yellow to golden yellow and finally to almost black when ripe. The black-brown lines are a result of the flesh becoming sweet and are not a sign of spoilage. When unripe, the cream-coloured flesh under the skin is astringent, sour, and unripe. As it ripens, it becomes softer and thicker and acquires a creamy consistency.
Malaysian bananas should be stored at room temperature in a cool, dark place out of direct sunlight. Once ripe, the fruit will remain fresh for several days. You can also freeze bananas or stored for later use. Also, be careful not to expose the flesh to air, as this can cause the bananas to turn brown over time.
These Malaysian bananas are popular as dessert bananas because of their creamy, juicy flesh like goreng pisang. The fruit can be eaten fresh or sliced lengthwise and spread with nut butter as a snack, sliced into yoghurt, breakfast bowls or chopped and placed on toast. Bananas can be dipped whole in milk chocolate and frozen, mashed in smoothies as a natural thickener, or sliced or mashed and fried as an appetiser. They can also be baked into breads, muffins, cakes and puddings, boiled down into jams or sauces, used as ice cream or deep fried into Pisang goreng. Banana fritters have a tropical, semi-sweet flavour that goes well with vanilla, chocolate, maple syrup, fruits such as citrus, coconut, stone fruits and berries.
