Japanese burdock root in Japanese is called "gobo," is a root vegetable that has a crunchy texture and a mildly sweet and earthy flavour. Fresh burdock roots can be stored in the refrigerator for up to 2 weeks if wrapped in a damp paper towel and placed in a plastic bag. They can also be stored in the freezer, either sliced or whole, for up to 6 months in an airtight container or freezer bag.
Burdock root, which is long, slender, and woody, has traditional uses in Japanese and Chinese crafts such as creating buttons, baskets, and musical instruments.
