STORAGE

After removing the leaves from the roots, all you have to do is put the beets in a plastic bag, seal it and put it in the vegetable compartment of your fridge. They should keep for 2-3 weeks.

Eating beetroot may cause your urine to appear pink or red. This is normal because a lack of stomach acid makes it difficult to digest and absorb nutrients, and your body may have trouble metabolising the red hue of beetroot. So when you eat beetroot or drink beetroot juice, you may see red or pink urine, which is normally mistaken for blood.
