Cherry Tomatoes on Vine (樱桃番茄)

Cherry tomatoes on vines are much sweeter than large tomatoes. Each tomato is round and red and has a lovely tomato flavour with just the right amount of sweetness and sharpness. They should be almost firm, thin and smooth-skinned, with a uniform colour and size and a high sugar-acid ratio. If they are sold with stalks, they will continue to ripen in storage.

STORAGE

All types of cherry tomatoes should be stored at room temperature for two to three days, or until they are ripe and ready to use, after which refrigeration can halt the deterioration process and prevent them from ripening further. Allow chilled cherry tomatoes to come to room temperature before serving raw, or simply add them to prepared dishes.

Fresh corn, chillies, melons, shelled beans, cream cheese, scallops, prawns, aubergines, okra, cucumbers, fresh almonds, avocados, courgettes and herbs such as mint, rocket and basil go well with cherry tomatoes. Cherry tomatoes are also delicious raw, but cooking enhances their sweetness and intensifies their flavour. Consider blanching the tomatoes and removing the skin, blanching them on the grill to give them a smoky note, and preparing a sauce with ripe fruit or a tomato broth that can be served hot or cold.
