At first glance, kumquats may be mistaken for baby oranges. They are, however, one of the few citrus fruits that do not need peeling due mainly to their thin, sweet edible skin and absence of bitter pith. Kumquats have a tart flesh that pairs well with the peels to balance out the sour flavours. They contain a few little edible seeds that may be eaten or removed, allowing the fruit to be consumed whole. The finest kumquats have tight, colourful glossy skin and a bulbous form with a few green leaves still attached, similar to selecting the best oranges.
They, like oranges, can be kept in the kitchen fruit bowl for a few days. If stored in a sealed container, they may be kept in the fridge for up to two weeks. They are often consumed at room temperature or cold. Also, t hey are made up of 80 percent water and are very hydrating to eat, making them easy to shrivel after a week of being removed from the fridge.
