Fresh Ginger (生姜)

Fresh ginger has a slightly peppery and sweet taste as well as a hot and spicy aroma. Like garlic, fresh ginger softens when cooked and becomes hot when sautéed. The ground version is less intense in flavour, but has a warm pungency and a hint of sweetness.

STORAGE

If you want to use the ginger immediately or within a week, storing it at room temperature. To keep unpeeled ginger longer, squeeze the air out of the ziplock bag before storing it in the refrigerator. Pat it dry first if it has been sliced or diced. This will prevent the ginger from spoiling due to too much moisture.
