Brown shimeji mushrooms have a more pronounced umami flavour and are characterised by their delicate taste and tooth-like texture. Shimeji mushrooms should not be eaten raw, but cooked. When cooked, they develop a slightly nutty aroma with a slightly sweet taste. The texture is incredibly tender, yet remains firm to the bite.
You can keep the mushrooms refrigerated in their original packaging and eat them within a week of storage. Whatever you do, do not freeze them!
When shimeji mushrooms are grown commercially, they are usually kept very clean. To prepare them for cooking, simply cut off the base of the mushroom cluster, split the stems and rinse them carefully.
