Carrots have a combination of earthy, woody, sweet and bitter flavours. The middle part of the carrot is usually sweet, while the outer and upper parts are bitter. Carrots become sweeter as they cook and they also release secret amounts of health-promoting beta-carotene, which is 30% more effective than in raw carrots.
Carrots can be kept fresh by submerging them completely in cold water in a container or sealed plastic bag with unpeeled, unwashed carrots. Remember to change the water every four to five days if it becomes cloudy.
